Tart Crust

Chocolate Filling

  • 4 ounces high-quality dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Tart Crust: Combine the all-purpose flour, sugar, and a pinch of salt in a mixing bowl. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Add the egg yolk and mix just until the dough starts to come together. Wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes.
  2. Shape and Bake the Crust: Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/8 inch thickness. Cut into rounds slightly larger than your mini tart pans or muffin tin cups. Press the dough rounds gently into each mold, trimming off excess. Prick the crust bottoms with a fork and bake for 10-12 minutes or until golden. Let them cool completely.
  3. Make the Chocolate Filling: Heat the heavy cream in a saucepan over medium heat until just about to simmer. Pour the hot cream over chopped dark chocolate in a bowl. Let it sit for a minute to melt, then stir until smooth and glossy. Add vanilla extract and stir again to combine.
  4. Assemble the Tarts: Pour the warm chocolate filling gently into the cooled tart shells, filling them almost to the top. Allow them to set at room temperature, then transfer to the refrigerator to chill for at least one hour until the filling is firm.
  5. Serve and Enjoy: Once chilled, carefully remove the Mini Chocolate Tarts from the molds. Serve plain or garnish with your favorite toppings such as fresh berries, powdered sugar, or a sprinkle of sea salt.
