Veggies & Wrap

  • 2 pita breads, warmed
  • 1 medium tomato, thinly sliced
  • 1/2 red onion, thinly sliced
  • Fresh dill and oregano, for garnish
  • Olive oil, for drizzling (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. This marinade infuses the chicken with bright, herby Mediterranean flavors.
  2. Marinate the chicken: Toss the sliced chicken breasts in the marinade, ensuring each piece is well coated. Allow to marinate for at least 20 minutes, or up to 2 hours for best flavor absorption.
  3. Make the tzatziki sauce: Grate the cucumber and squeeze out excess water thoroughly. In a separate bowl, combine grated cucumber, Greek yogurt, minced garlic, chopped fresh dill, lemon juice, and salt. Mix well and chill to let the flavors meld while cooking the chicken.
