Instructions

  1. Prepare the Mashed Potatoes: Start with fluffy mashed potatoes made from peeled, boiled potatoes mixed with butter, salt, and a splash of milk until smooth. Allow the potatoes to cool completely before using in the dough to avoid killing the yeast.
  2. Activate the Yeast: Warm the milk so it’s warm but not hot, then combine it with sugar and active dry yeast. Let the mixture sit for 5 to 10 minutes until frothy, indicating the yeast is activated and ready to use.
  3. Mix Dough Ingredients: In a large bowl, combine the flour, salt, cooled mashed potatoes, activated yeast mixture, and beaten eggs. Mix until a sticky dough forms. Transfer to a floured surface and knead the dough for 8 to 10 minutes until smooth and elastic.
  4. First Dough Rise: Place the kneaded dough in a lightly oiled bowl, cover it tightly with a damp cloth or plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Shape and Add Fillings: Once risen, gently punch down the dough and divide it into equal portions. Flatten each piece, sprinkle with cheddar cheese, bacon bits, and chopped chives, then roll tightly into balls. Arrange the rolls on a greased baking sheet.
