Instructions

  1. Prepare the crust: Mix graham cracker crumbs, melted butter, and sugar in a bowl until well combined. Press the mixture firmly into the bottom of a lined 8×8-inch pan to create a compact, even base that will hold together once frozen.
  2. Whisk the lemon ice cream mixture: In a large bowl, combine the sweetened condensed milk, heavy cream, fresh lemon juice, lemon zest, and sugar. Using a hand mixer, whip the mixture until it slightly thickens and becomes smooth and creamy.
  3. Pour over crust and smooth: Carefully pour the lemon ice cream mixture over the prepared crust. Use a spatula to spread evenly, creating a smooth top layer.
  4. Freeze until firm: Place the pan in the freezer and freeze solid for at least 4 to 6 hours, preferably overnight, for best texture.
