Lasagna Soup

Lasagna Soup is a warm, comforting one-pot meal that transforms classic lasagna into a hearty, spoonable soup. Featuring tender noodles, savory meat, vibrant tomatoes, and creamy cheeses, it’s perfect for cozy dinners or when you crave rich, familiar flavors in a simple, easy-to-make dish.

Ingredients

Scale

Meat and Aromatics

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Tomatoes and Broth

  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or chicken broth

Pasta and Herbs

  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 tbsp Italian seasoning
  • 1/4 cup fresh basil, chopped

Cheeses

  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (plus extra for garnish)

Instructions

  1. Brown the Meat: In a large pot over medium heat, cook your ground beef or Italian sausage until browned and fully cooked, breaking it up as it cooks for even texture.
  2. Sauté Aromatics: Add diced onions and minced garlic to the cooked meat. Sauté until softened and fragrant, about 3-5 minutes.
  3. Add Tomatoes and Broth: Pour in the crushed tomatoes and broth, stirring well to combine. Add Italian seasoning and fresh basil to infuse the soup with classic lasagna flavors.
  4. Cook the Noodles: Break the lasagna noodles into smaller pieces and add them to the simmering soup. Cook until tender, about 10 minutes, stirring occasionally to prevent sticking.
  5. Stir in Cheeses: Lower the heat and stir in dollops of ricotta cheese and shredded mozzarella, allowing them to melt slightly and create creamy pockets within the soup.
  6. Serve and Garnish: Ladle the soup into bowls and sprinkle with freshly grated Parmesan, chopped basil, or extra mozzarella for a satisfying finish.

Notes

  • Use fresh herbs: Fresh basil or parsley takes the flavor profile from good to unforgettable.
  • Don’t overcook noodles: Add them last and watch carefully to avoid mushy pieces in your soup.
  • Layer your cheeses: Mixing ricotta, mozzarella, and Parmesan provides creaminess with sharp, melty contrast.
  • Brown meat well: A good sear locks in flavor that makes the soup taste robust and hearty.
  • Let it rest: Let the soup sit for a few minutes after cooking so flavors can meld perfectly.
