Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

Sauce

  • 2 tablespoons gochujang (Korean chili paste)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon brown sugar or honey
  • 2 tablespoons water

Vegetables

  • 1 bell pepper, sliced
  • 1 medium onion, sliced

Finish and Garnish

  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds

Instructions

  1. Prepare the Chicken and Vegetables: Slice the chicken into bite-sized pieces for even cooking. Chop the bell peppers and onions into similar-sized pieces to ensure they cook evenly and quickly.
  2. Make the Sauce: In a small bowl, whisk together gochujang, soy sauce, minced garlic, grated ginger, brown sugar, and water until smooth. This sauce delivers the ideal spicy-sweet balance for the stir fry.
  3. Cook the Chicken: Heat 1 tablespoon of oil in a large pan over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until the chicken browns and is cooked through.
  4. Add Vegetables and Sauce: Add the sliced bell peppers and onions to the pan. Stir fry for 3-4 minutes until the vegetables are slightly tender but still crisp. Pour in the prepared sauce and toss everything together, allowing the sauce to thicken and coat the chicken and vegetables.
  5. Finish and Garnish: Drizzle sesame oil over the stir fry for a fragrant, nutty finish. Sprinkle with sliced green onions and toasted sesame seeds. Serve immediately while hot and vibrant.

Notes

  • Prep all ingredients ahead of time for a quick cooking process.
  • Do not overcrowd the pan; cook chicken in batches if needed to get a perfect sear.
  • Adjust sauce thickness by adding water if too thick or cooking longer if too thin.
  • Use freshly minced garlic and grated ginger for maximum flavor and brightness.
  • Taste and adjust the spice level by altering the amount of gochujang used.
