Ingredients

Scale

Shrimp and Pineapple

  • 1 lb medium to large peeled and deveined shrimp
  • 1 fresh pineapple, cut into bite-sized chunks
  • Wooden or metal skewers (if wooden, soak in water for at least 30 minutes)

Jerk Marinade

  • 2 tablespoons jerk seasoning (blend of allspice, thyme, cinnamon, and Scotch bonnet peppers)
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the jerk seasoning, minced garlic, grated ginger, lime juice, olive oil, salt, and pepper. This marinade will infuse the shrimp with authentic Caribbean flavor and tenderize it.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, tossing well to coat each piece thoroughly. Let the shrimp marinate for at least 15 minutes, ideally 30 minutes, to deepen the flavors without compromising texture.
  3. Prepare the Pineapple: Cut the fresh pineapple into bite-sized chunks, roughly the same size as the shrimp, ensuring even cooking and an appealing presentation.
  4. Assemble the Skewers: Alternate threading shrimp and pineapple chunks onto the skewers, leaving a little space between pieces to allow even heat circulation and char marks.
  5. Grill to Perfection: Preheat a grill to medium-high heat. Oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 2-3 minutes per side until the shrimp turn opaque with slight char marks and the pineapple caramelizes to a golden brown.
  6. Serve Immediately: Remove the skewers from the grill and serve hot, optionally garnished with freshly chopped cilantro or parsley, and a squeeze of fresh lime juice.

Notes

  • Use fresh or properly thawed shrimp for best texture and flavor.
  • Do not over-marinate shrimp; 15 to 30 minutes is optimal to avoid toughness.
  • Preheat grill before cooking to lock in juiciness and achieve char marks.
  • Brush grill grates with oil to prevent skewers from sticking.
  • If using wooden skewers, soak them in water for at least 30 minutes to avoid burning.
  • Serve with fresh lime juice on top to brighten the flavors.
