Ingredients

Scale

Protein

  • 4 boneless, skinless chicken breasts

Vegetables & Aromatics

  • 1/2 cup sun-dried tomatoes (preferably oil-packed, drained with oil reserved)
  • 3 cups fresh spinach
  • 4 garlic cloves, minced

Liquids & Dairy

  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Oils & Seasonings

  • 2 tablespoons olive oil or butter
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Step 1: Sauté – Set your Instant Pot to sauté mode. Add olive oil or butter, then cook the minced garlic until fragrant and golden. Next, sear the chicken breasts on both sides until they develop a nice golden crust, enhancing flavor and texture.
  2. Step 2: Deglaze – Pour in the chicken broth to deglaze the pot. Scrape the browned bits off the bottom using a wooden spoon; this adds depth of flavor and prevents the Instant Pot from burning during pressure cooking.
  3. Step 3: Pressure Cook – Add the sun-dried tomatoes to the pot. Season everything with Italian seasoning, salt, and pepper. Seal the Instant Pot lid and cook on high pressure for 8-10 minutes, ensuring the chicken becomes tender.
  4. Step 4: Release and Add Cream – Perform a quick pressure release once cooking is complete. Open the lid carefully, then immediately stir in the heavy cream, grated Parmesan cheese, and fresh spinach. Allow the residual heat to wilt the spinach and thicken the sauce naturally.
  5. Step 5: Final Stir and Serve – Gently mix everything so the creamy sauce evenly coats the chicken. Taste and adjust seasonings as needed. Serve hot for a hearty and indulgent meal.

Notes

  • Use room temperature chicken breasts for even cooking.
  • Always deglaze the pot after sautéing to avoid burn warnings.
  • Oil-packed sun-dried tomatoes add extra flavor; reserve some oil for sautéing if desired.
  • Add fresh spinach only after pressure cooking to preserve its vibrant color and texture.
  • For a lighter sauce, substitute heavy cream with half-and-half or milk, though heavy cream yields the best richness.
