Instructions

  1. Sauté the Chicken: Season the chicken breasts generously with salt and pepper. Set the Instant Pot to ‘Sauté’ mode and add the butter. Once melted, brown the chicken for 2-3 minutes on each side until golden. This locks in the juices and builds flavor.
  2. Add Garlic and Liquids: Add the minced garlic to the pot and sauté briefly until fragrant. Pour in the chicken broth and heavy cream, stirring to combine and deglazing the bottom of the pot to prevent stuck bits.
  3. Add Pasta: Break the fettuccine in half and layer it evenly over the liquid in a crisscross pattern without stirring. This helps prevent the pasta from sticking or clumping during cooking.
  4. Pressure Cook: Seal the Instant Pot lid and set to high pressure for 7 minutes. When cooking is complete, use the quick-release method carefully to avoid overcooking the pasta.
  5. Stir in Cheese and Finish: Open the lid and remove the chicken breasts. Slice them thinly against the grain. Stir the grated Parmesan cheese into the pot until the sauce thickens and becomes creamy. Return the sliced chicken to the pot and stir to coat everything evenly before serving.
