Ready in under 30 minutes, this wholesome and family-friendly dish is ideal for busy evenings and pairs excellently with rice or noodles.

Ingredients

Protein

  • Boneless chicken breast or thighs – 1 lb (about 450g), sliced into bite-sized strips

Vegetables

  • Bell peppers – 1 cup, sliced
  • Broccoli florets – 1 cup
  • Snap peas – 1 cup
  • Optional: mushrooms, carrots, or zucchini (additional 1 cup if desired)
  • Green onions – 2, thinly sliced for garnish

Sauce

  • Garlic cloves – 3, minced
  • Honey – 3 tablespoons
  • Soy sauce – 3 tablespoons (or tamari/coconut aminos for gluten-free)
  • Cornstarch – 1 teaspoon

Cooking Oil

  • Olive oil or sesame oil – 1-2 tablespoons

Optional

  • Chili flakes – ¼ to ½ teaspoon, for a spicy kick

Instructions

  1. Prepare the Ingredients: Slice the chicken into bite-sized strips. Chop bell peppers, broccoli florets, and snap peas into even pieces. Mince the garlic finely to infuse maximum flavor.
  2. Mix the Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, and cornstarch until you achieve a smooth, glossy stir-fry sauce.
  3. Cook the Chicken: Heat 1 tablespoon of olive or sesame oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook until golden brown and cooked through, about 5 to 7 minutes. Remove the chicken and set aside.
  4. Sauté the Vegetables: In the same pan, add a little more oil if needed, then toss in the vegetables. Stir-fry for 3 to 4 minutes until they are crisp-tender but still vibrant in color.
  5. Combine and Simmer: Return the chicken to the pan, pour the prepared sauce over everything, and stir well to coat. Cook for an additional 2 to 3 minutes, allowing the sauce to thicken and glaze the chicken and veggies perfectly.
  6. Garnish and Serve: Sprinkle sliced green onions and chili flakes if desired on top. Serve hot over steamed jasmine rice, brown rice, quinoa, or noodles for a complete meal.

Notes

  • Use high heat to ensure chicken sears nicely and vegetables stay crisp.
  • Cut chicken and vegetables uniformly for even cooking.
  • Avoid overcrowding the pan; stir fry in batches if necessary to prevent steaming.
  • Pre-mix the sauce thoroughly to dissolve cornstarch and avoid clumps.
  • Let cooked chicken rest briefly before adding back to sauce to retain juiciness.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze leftover stir fry separately from rice or noodles for up to 2 months.
  • Reheat gently in a skillet over medium heat or microwave on medium power, stirring halfway.
