Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground beef and pork with finely grated onion, minced garlic, egg, bread crumbs soaked in milk, ground allspice, and nutmeg. Season generously with salt and pepper. Mix gently until just combined to keep the meatballs tender.
  2. Shape Into Meatballs: Wet your hands with water and roll the mixture into small, even-sized balls about 1 to 1.5 inches in diameter. Consistent size ensures even cooking.
  3. Brown the Meatballs: Heat butter in a heavy skillet over medium heat. Add the meatballs in batches and cook until browned on all sides but not fully cooked through, creating a flavorful crust and sealing in juices. Remove and set aside.
  4. Make the Cream Sauce: In the same skillet, melt more butter and whisk in flour to form a roux. Slowly add beef broth while whisking to avoid lumps. Stir in sour cream or heavy cream, season with salt and pepper, and cook on low heat until the sauce thickens.
