Ingredients

Scale

Proteins

  • 1 lb ground beef

Vegetables and Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced

Canned Goods

  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans or black beans, rinsed and drained

Liquids

  • 1 cup beef broth

Spices and Seasonings

  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Optional Variations

  • Diced jalapeños or cayenne pepper (for heat)
  • Smoked paprika or chipotle powder (for smoky flavor)
  • Diced zucchini, corn, or mushrooms (for added veggies)
  • Dark beer (to replace part of beef broth)

Instructions

  1. Sauté the Aromatics and Beef: Turn the Instant Pot to the sauté setting and add a little oil. Cook chopped onions and garlic until softened and fragrant. Add ground beef, breaking it up with a spoon, and cook until browned and no longer pink.
  2. Add the Spices and Tomato Paste: Sprinkle chili powder, cumin, oregano, salt, and pepper over the beef. Stir to toast the spices lightly, then add tomato paste, mixing well to coat the beef evenly.
  3. Incorporate Liquids, Beans, and Veggies: Pour in crushed tomatoes and beef broth, then add rinsed beans and diced green bell pepper. Stir to combine all ingredients thoroughly.
  4. Pressure Cook: Secure the Instant Pot lid, set the valve to sealing, and cook on high pressure for 20 minutes. Afterward, allow a natural pressure release for 10 minutes before performing a quick release to safely open the lid.
  5. Final Stir and Serve: Open the lid and stir the chili well. Taste and adjust seasoning as needed. For a thicker chili, use the sauté function for a few minutes, stirring occasionally to reduce excess liquid.

Notes

  • Brown the beef well to enhance the chili’s flavor and texture.
  • Use fresh spices and aromatics to achieve vibrant taste.
  • Adjust liquid quantities carefully; Instant Pot requires less liquid than stove cooking.
  • Let the chili rest or refrigerate overnight for flavors to deepen.
  • This chili is gluten-free if you use gluten-free broth and spices.
