Instructions

  1. Prepare the Shrimp and Pineapple: Peel and devein the shrimp if not already done, then cut the fresh pineapple into bite-sized chunks. Pat the shrimp dry with paper towels to help the marinade stick and reduce moisture during grilling.
  2. Make the Marinade: In a bowl, whisk together olive oil, minced garlic, honey or brown sugar, smoked paprika, fresh lime juice, salt, and pepper until fully combined to create a sweet, tangy, and smoky marinade.
  3. Marinate the Ingredients: Add the shrimp and pineapple chunks to the marinade and toss gently to coat evenly. Let them marinate for at least 15 minutes, but no longer than 30 minutes to prevent the shrimp from becoming tough.
  4. Skewer the Ingredients: Thread the shrimp and pineapple alternately onto the soaked wooden or metal skewers, leaving small gaps between each piece to allow even cooking.
  5. Grill to Perfection: Preheat the grill to medium-high heat. Place the skewers on the grill and cook for 2-3 minutes per side until the shrimp turn opaque pink and the pineapple develops caramelized edges. Be careful not to overcook the shrimp to keep it juicy.
