Ingredients

Scale

Produce

  • 1 cup freshly grated zucchini (about 1 medium zucchini)
  • 34 green onions, finely chopped
  • Optional herbs: 1-2 tsp fresh thyme or parsley, finely chopped

Dairy & Eggs

  • 1 cup sharp or mild cheddar cheese, freshly shredded
  • 2 large eggs
  • 1/2 cup milk or buttermilk
  • 1/4 cup olive oil or melted butter

Baking & Pantry

  • 1 1/2 cups all-purpose flour (or gluten-free blend for GF option)
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Prepare the zucchini and green onions: Wash and finely grate the zucchini. Gently squeeze out excess liquid using a clean kitchen towel or paper towels to prevent sogginess. Finely chop the green onions to ensure even flavor distribution.
  2. Mix the dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and pepper to evenly distribute the leavening agents and seasoning.
  3. Combine wet ingredients: In a separate bowl, beat the eggs, then add milk (or buttermilk) and olive oil or melted butter. Whisk until smooth to build the moisture base for the bread.
  4. Bring it all together: Pour the wet ingredients into the dry ingredients and gently fold until just combined, taking care not to overmix. Fold in the grated zucchini, chopped green onions, and shredded cheddar cheese evenly throughout the batter.
  5. Bake to perfection: Transfer the batter to a greased or parchment-lined 8×4 inch loaf pan. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool slightly before slicing to lock in moisture and flavor.

Notes

  • Dry your zucchini well to avoid soggy bread and help it hold its shape.
  • Use freshly shredded cheddar cheese for better melting and richer flavor.
  • Do not overmix the batter to keep the bread tender and avoid dense texture.
  • Check the bread starting at 50 minutes as oven temperatures may vary to prevent overdrying.
  • Feel free to add nuts or seeds for extra crunch and texture.
