Ingredients

Scale

Meatballs

  • 1 pound lean ground turkey
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon olive oil

Gyro Assembly

  • 4 pita breads or flatbreads
  • Tomato slices (optional)
  • Red onion rings (optional)
  • Fresh spinach or lettuce (optional)

Instructions

  1. Prepare the Meatball Mixture: Combine the ground turkey, minced garlic, chopped onion, fresh parsley, oregano, cumin, paprika, salt, and pepper in a bowl. Mix gently to incorporate all ingredients without overworking, to keep the meatballs tender and juicy.
  2. Shape and Cook the Meatballs: Form the mixture into small meatballs about 1-2 inches in diameter. Heat olive oil in a pan over medium heat and pan-sear the meatballs until browned on all sides and cooked through, about 8-10 minutes, or bake in a preheated oven at 375°F (190°C) for 15-20 minutes.
  3. Make the Tzatziki Sauce: Grate the cucumber and squeeze out excess moisture. In a bowl, mix the Greek yogurt with grated cucumber, minced garlic, chopped dill, lemon juice, salt, and olive oil. Chill the sauce to allow the flavors to meld.
  4. Assemble Your Gyros: Warm pita breads to make them pliable. Layer each pita with cooked turkey meatballs, a generous spoonful of tzatziki sauce, and optional fresh veggies like tomato slices, red onion rings, and spinach or lettuce. Fold or roll the gyros and serve immediately.

Notes

  • Don’t overmix the meat to keep meatballs tender.
  • Drain cucumber thoroughly to avoid watery tzatziki.
  • Use fresh herbs for the best flavor.
  • Rest cooked meatballs a few minutes before serving to seal in juices.
  • Warm pita bread before assembling for softness and ease of folding.
