Ingredients

Scale

Chicken and Potatoes

  • 8 chicken pieces (thighs or drumsticks) with skin on
  • 2 pounds Yukon Gold or red potatoes, chopped evenly

Marinade

  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 4 garlic cloves, minced
  • 1/4 cup good quality olive oil
  • 1 tablespoon fresh or dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Roasting Additions

  • 1 lemon, sliced thinly

Garnish

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together freshly squeezed lemon juice, minced garlic, olive oil, oregano, salt, and pepper to create a lively, aromatic marinade that will infuse the chicken and potatoes with flavor.
  2. Toss the Chicken and Potatoes: Add chicken pieces and chopped potatoes to the marinade bowl, tossing everything well so every bit absorbs the citrusy goodness and herbaceous notes evenly.
  3. Arrange on Baking Sheet: Spread the marinated chicken and potatoes in a single layer on a large baking sheet or roasting pan. Place lemon slices over and around the pieces to add more bright flavor during roasting.
  4. Roast Until Golden and Juicy: Bake in a preheated oven at 400°F (200°C) for about 45 to 55 minutes, or until the chicken skin is crisp and the potatoes are tender and golden. Halfway through, baste with pan juices for extra flavor and moisture.
  5. Garnish and Serve: Remove from oven and sprinkle with freshly chopped parsley before serving. Let the dish rest briefly to settle the flavors.

Notes

  • Pat the chicken dry before marinating to ensure crispier skin.
  • Cut potatoes evenly for uniform cooking.
  • Marinate chicken and potatoes for at least 30 minutes or up to overnight for deeper flavor.
  • Use a wire rack on the baking sheet to allow air circulation and crisper skin if desired.
  • Do not overcrowd the baking sheet; leave space between pieces to roast rather than steam.
