  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives

Instructions

  1. Prepare the marinade: In a large bowl, whisk together olive oil, fresh lemon juice, minced garlic, dried oregano, thyme, salt, and pepper to create a flavorful marinade that will tenderize the chicken and infuse it with authentic Greek flavors.
  2. Marinate the chicken: Add the chicken thighs or breasts to the bowl, coating them thoroughly with the marinade. Let them marinate for at least 30 minutes, or for deeper flavor, cover and refrigerate for up to 2 hours.
  3. Assemble the bake: Preheat the oven to 400°F (200°C). In a baking dish, spread out the sliced red onions, halved cherry tomatoes, and Kalamata olives. Nestle the marinated chicken pieces evenly over the vegetables.
  4. Bake until golden: Place the dish in the oven and bake for 35 to 45 minutes, or until the chicken is fully cooked through and the skin is crispy. The vegetables should become tender and develop slight caramelization.
  5. Add feta and serve: Remove the bake from the oven and sprinkle crumbled feta cheese on top. Let it rest for a few minutes to allow the cheese to soften before serving.
