Ingredients

Dry Ingredients

  • All-Purpose Flour: 2 cups
  • Ground Ginger: 2 teaspoons
  • Ground Cinnamon: 1 teaspoon
  • Baking Soda: 1 teaspoon
  • Salt: 1/4 teaspoon

Wet Ingredients

  • Butter (softened): 1/2 cup (1 stick)
  • Brown Sugar: 3/4 cup packed
  • Molasses: 1/3 cup
  • Eggs: 2 large
  • Vanilla Extract: 1 teaspoon

Filling

  • Cream Cheese (softened): 8 ounces
  • Butter (softened): 1/4 cup (1/2 stick)
  • Confectioners’ Sugar: 2 cups
  • Heavy Cream: 2 tablespoons

Instructions

  1. Prepare the Dry Ingredients: In a medium bowl, whisk together all-purpose flour, ground ginger, cinnamon, baking soda, and a pinch of salt to evenly distribute the spices and leavening agents for consistent flavor and rise.
  2. Cream the Butter and Sugar: Using a mixer, beat the softened butter and brown sugar together until light and fluffy, trapping air in the mixture to help create a soft and airy texture.
  3. Add Eggs and Molasses: Mix in the eggs one at a time, followed by the molasses and vanilla extract, ensuring smooth incorporation and preventing curdling while building the classic gingerbread flavor.
  4. Combine Wet and Dry Ingredients: Gradually blend the dry ingredient mixture into the wet ingredients, mixing just until combined to avoid overworking and achieving tender cakes.
  5. Bake the Cakes: Drop spoonfuls of batter onto a parchment-lined baking sheet, forming small rounds about 2 inches in diameter. Bake at 350°F (175°C) for 10–12 minutes until edges are set but centers remain soft. Let cool completely.
  6. Prepare the Filling: Beat cream cheese, butter, confectioners’ sugar, and heavy cream until smooth and fluffy. Adjust sweetness to taste, and optionally add a pinch of cinnamon for extra spice.
  7. Assemble the Whoopie Pies: Spread or pipe a generous dollop of filling on the flat side of one cake and sandwich with another. Press gently to join without squeezing out the filling.

Notes

  • Use room temperature butter, eggs, and cream cheese for easier mixing and smoother texture.
  • Mix wet and dry ingredients just until combined to maintain softness.
  • Line baking sheets with parchment paper to prevent sticking and promote even baking.
  • Allow cakes to cool completely before filling to prevent filling from melting or oozing.
  • Customize filling by adding vanilla, spices, or a splash of bourbon for a gourmet twist.
