Ingredients

Scale

Dry Ingredients

  • 1 1/2 cups rolled oats
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract

Optional Add-Ins

  • 1/2 cup raisins, nuts (walnuts or pecans), or chocolate chips

Instructions

  1. Prep Your Ingredients: Measure all your ingredients carefully and preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix the Wet Ingredients: Cream together the softened butter and brown sugar until light and fluffy. Then beat in the egg, molasses, and vanilla extract until well combined and smooth.
  3. Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, rolled oats, baking soda, ground ginger, cinnamon, cloves, and salt to evenly distribute spices and leavening agents.
  4. Bring Wet and Dry Ingredients Together: Gradually fold the dry ingredients into the wet mixture with a spatula. Mix just until combined to keep the cookies tender. If using add-ins like nuts, raisins, or chocolate chips, gently fold them in now.
  5. Scoop and Shape: Drop rounded tablespoon-sized scoops onto the prepared baking sheet, spacing them about 2 inches apart. Slightly flatten each cookie with the palm of your hand or the back of a spoon to achieve a classic shape.
  6. Bake and Cool: Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden but the centers still look slightly soft. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use softened butter at room temperature for easy creaming and a light texture.
  • Do not overmix the dough; mix just until combined to keep cookies tender.
  • If possible, chill the dough for 30 minutes to prevent spreading and intensify flavors.
  • Use fresh ground spices for the best aroma and flavor.
  • Watch the baking time closely and remove cookies when centers still look soft; they will firm up as they cool.
