Ingredients

Scale

For the Cookies

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 1/4 cups all-purpose flour (or gluten-free flour blend)
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

For the Eggnog Frosting

  • 1/2 cup (1 stick) unsalted butter or cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 34 tablespoons eggnog
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: Cream together the softened butter and brown sugar until smooth and fluffy. Beat in the egg and molasses until well combined. In a separate bowl, whisk together flour, baking soda, ground ginger, cinnamon, cloves, and nutmeg. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  2. Chill the Dough: Wrap the dough tightly in plastic wrap and refrigerate for at least one hour. This step is essential to help the cookies hold their shape and improve their texture.
  3. Roll and Cut the Cookies: On a lightly floured surface, roll the chilled dough to about 1/4 inch thickness. Use a round cookie cutter to cut evenly sized circles and place them on a parchment-lined baking sheet, spacing them well apart.
  4. Bake the Cookies: Preheat the oven to 350°F (175°C). Bake the cookies for 8-10 minutes, until the edges are set but the centers remain soft. Remove from the oven and cool completely on wire racks before frosting.
  5. Make the Eggnog Frosting: In a mixing bowl, beat the softened butter or cream cheese with powdered sugar until light and creamy. Add eggnog slowly, one tablespoon at a time, until you achieve a smooth, spreadable consistency. Stir in vanilla extract for added flavor.
  6. Assemble the Sandwich Cookies: Spread a generous dollop of frosting on the bottom side of one cookie. Top with another cookie and gently press together to form a sandwich. Repeat with the remaining cookies.

Notes

  • Chill the dough thoroughly to prevent spreading and ensure soft, chewy cookies.
  • Use the spoon-and-level method to measure flour accurately to avoid dense cookies.
  • Freshly ground spices enhance flavor intensity significantly.
  • Ensure cookies are completely cooled before frosting to prevent melting.
  • Adjust frosting thickness by adding more powdered sugar to thicken or more eggnog to thin.
