Instructions

  1. Prepare the Dough: Dissolve the instant yeast and sugar in the warm water and let it bloom for about 5 minutes until frothy. In a large bowl, combine the flour and sea salt. Add the yeast mixture and olive oil, then knead by hand for 8–10 minutes or 5 minutes using a stand mixer until the dough is smooth and elastic.
  2. First Rise: Place the dough in a greased bowl and cover it with a clean towel. Let it rise in a warm spot for about 1 hour or until it doubles in size, ensuring light and airy muffins.
  3. Shape and Season: Gently punch down the risen dough and divide it into muffin-sized portions. Place each portion into a greased muffin tin. Using oiled fingertips, press small indentations on top, then evenly sprinkle the minced garlic, fresh rosemary, and a pinch of sea salt over each muffin.
  4. Second Rise: Loosely cover the muffin tin with plastic wrap or a kitchen towel and let the dough rise again for 20–30 minutes until puffy.
  5. Bake to Perfection: Preheat your oven to 400°F (200°C). Bake the muffins for 20–25 minutes until golden brown and crispy on the outside while soft inside. Immediately after baking, drizzle with extra virgin olive oil for added shine and flavor.
