Instructions

  1. Prepare the Ingredients: Preheat your oven to 400°F (200°C). Rinse and halve the baby potatoes, pat the chicken dry with paper towels, and mince the garlic cloves. This ensures even cooking and optimal flavor infusion.
  2. Season the Chicken and Potatoes: In a large bowl, toss the potatoes with 2 tablespoons olive oil, half of the minced garlic, Italian seasoning, salt, and pepper. In a separate bowl, rub the chicken with 1 tablespoon olive oil, the remaining garlic, grated Parmesan cheese, salt, and pepper, making sure the chicken is fully coated for maximum flavor.
  3. Arrange on Baking Sheet: Line a baking sheet with parchment paper or foil. Spread the seasoned potatoes evenly across the sheet. Nestle the chicken pieces among the potatoes, spacing them out adequately to ensure they roast and develop a crispy exterior rather than steaming.
  4. Bake to Perfection: Place the baking sheet in the preheated oven and bake for 35 to 40 minutes. Turn the potatoes halfway through baking to achieve golden, crispy edges.
