Ingredients

Scale

Main Ingredients

  • 34 fresh garlic cloves, peeled and finely sliced
  • 12 oz (340 g) button or cremini mushrooms, cleaned and sliced evenly
  • 8 oz (225 g) pasta of your choice (spaghetti, fettuccine, or linguine recommended)
  • 1 cup (240 ml) heavy cream or a creamy alternative (e.g., coconut milk or cashew cream for vegan)
  • 1/2 cup (50 g) grated Parmesan cheese (or nutritional yeast/vegan cheese for dairy-free)
  • 2 tbsp olive oil or butter
  • 2 tbsp fresh parsley or basil, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Peel and finely slice the garlic cloves and clean the mushrooms. Slice the mushrooms evenly to ensure they cook uniformly.
  2. Cook the Pasta: Boil salted water and cook your pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water before draining to adjust sauce consistency later.
  3. Sauté Garlic and Mushrooms: Heat olive oil or butter in a large skillet over medium heat. Add the garlic and sauté briefly until fragrant but not browned. Then add the mushrooms and cook until they soften and release their juices.
  4. Make the Creamy Sauce: Reduce the heat and pour in the heavy cream, stirring gently to combine. Add grated Parmesan cheese and stir until fully melted into the sauce. If the sauce becomes too thick, slowly add reserved pasta water to reach your desired creaminess.
  5. Combine Pasta and Sauce: Transfer the cooked pasta to the skillet with the sauce and toss well. Cook together for a minute or two to allow the pasta to absorb the flavors.
  6. Finish and Serve: Turn off heat, season with salt and black pepper, and mix in chopped fresh herbs like parsley or basil. Serve immediately while warm.

Notes

  • Use fresh garlic for the best flavor and aroma; avoid pre-minced garlic.
  • Do not overcrowd the pan when cooking mushrooms; cook in batches if necessary to ensure proper browning.
  • Reserve pasta water to adjust sauce thickness and help sauce adhere to the pasta.
  • Sauté garlic on medium or medium-low heat to prevent bitterness from burning.
  • Add fresh herbs just before serving to retain their vibrant flavor and color.
