Ingredients

Scale

Main Ingredients

  • 200g fresh or thawed prawns (shrimp), deveined and peeled
  • 250g linguine pasta
  • 4 garlic cloves, freshly minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes (optional), to taste

Instructions

  1. Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, about 8 to 10 minutes. Reserve 1 cup of pasta water before draining the linguine.
  2. Sauté the Garlic: While the pasta cooks, heat olive oil and butter together in a large skillet over medium heat. Add the minced garlic and cook gently for 1 to 2 minutes until fragrant and golden, taking care not to burn it.
  3. Cook the Prawns: Add the prawns to the skillet, seasoning with salt and pepper. Cook for 2 to 3 minutes on each side until pink and slightly curled. If desired, sprinkle in red pepper flakes for some heat.
  4. Combine Pasta and Sauce: Drain the linguine and add it directly to the skillet with the prawns and garlic butter. Toss everything together, adding reserved pasta water gradually to loosen the sauce and allow it to cling to the noodles.
  5. Finish with Lemon and Parsley: Squeeze fresh lemon juice over the pasta and sprinkle with chopped parsley. Toss again to combine and serve immediately for best flavor and texture.

Notes

  • Use fresh or properly thawed frozen prawns for the best texture and taste.
  • Do not overcook the prawns to avoid rubbery texture.
  • Reserve pasta water because the starch helps bind the sauce and pasta perfectly.
  • Cook garlic on medium-low heat to maximize flavor and prevent bitterness.
  • Add lemon juice at the end to keep the fresh bright zing.
