Frozen Yogurt Berry Bark

Frozen Yogurt Berry Bark is a quick, easy, and healthy frozen dessert combining creamy Greek yogurt with fresh berries and optional nuts. Perfect for summer, this refreshing treat is packed with protein, antioxidants, and vibrant flavors, making it ideal for family snacks or party desserts.

Ingredients

Scale

Main Ingredients

  • 2 cups full-fat Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries, blackberries), washed and chopped if large
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Prepare Your Ingredients: Wash and dry your berries thoroughly, chopping larger ones like strawberries into bite-sized pieces. If using nuts, roughly chop them to blend well with the yogurt’s texture.
  2. Sweeten and Flavor the Yogurt: In a mixing bowl, combine the Greek yogurt with honey or maple syrup and vanilla extract. Stir well until smooth and evenly sweetened.
  3. Spread the Yogurt Mixture: Line a baking sheet with parchment paper and spread the sweetened yogurt evenly across it to about a 1/4-inch thickness, creating a smooth base for your bark.
  4. Add the Berries and Nuts: Scatter the mixed berries and chopped nuts evenly on top of the yogurt. Press the toppings lightly into the yogurt to ensure they stick after freezing.
  5. Freeze Until Firm: Place the baking sheet in the freezer and chill until completely frozen, usually about 4 hours or overnight for best results.
  6. Break Into Pieces and Serve: Once frozen solid, remove the bark from the parchment and break it into rustic, uneven pieces. Enjoy immediately or store for later snacking.

Notes

  • Use full-fat yogurt for a creamier texture and richer flavor.
  • Dry berries well to avoid icy texture in the bark.
  • Don’t overload toppings to maintain bark structure and ease of breaking.
  • Freeze on a flat surface for an even thickness.
  • Store in an airtight container in the freezer to avoid freezer burn and preserve freshness.
