Ingredients

Scale

Main Ingredients

  • 2 cups elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 4 tablespoons butter
  • 2 cups milk
  • 3 tablespoons all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko bread crumbs
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/2 teaspoon paprika
  • Optional: 1/2 teaspoon garlic powder
  • Oil for frying (vegetable or canola oil), enough for deep frying

Instructions

  1. Cook the macaroni: Boil elbow macaroni in salted water until tender but still firm to the bite. Drain and let cool completely.
  2. Prepare the cheese sauce: Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute to form a roux. Gradually whisk in milk and cook until sauce thickens. Remove from heat and stir in shredded cheddar cheese, salt, and pepper until smooth and creamy.
  3. Combine mac and cheese: Mix the cooked macaroni with the cheese sauce thoroughly, coating every piece. Let the mixture cool completely; chilling helps the balls hold their shape better.
  4. Shape the balls: Using hands or a small scoop, form the mac and cheese mixture into walnut-sized balls. Place on a lined tray and chill in the refrigerator for at least 30 minutes to firm up.
  5. Bread the balls: Set up a breading station with beaten eggs and panko bread crumbs. Dip each ball into the egg, then roll in bread crumbs until fully coated.
  6. Fry to golden perfection: Heat oil in a deep fryer or heavy skillet to 350°F (175°C). Fry balls in batches for 3-4 minutes until golden brown and crispy. Drain on paper towels and serve warm.

Notes

  • Chill the balls thoroughly before frying to prevent them from falling apart.
  • Use sharp aged cheddar cheese for a robust flavor.
  • Fry in small batches to maintain oil temperature and ensure even cooking.
  • For extra crispiness, double coat by repeating the egg and breadcrumb dipping process.
  • Serve immediately to enjoy the best crunch and gooey center.
