Scale

Main Ingredients

  • Fresh green beans, about 1 pound, washed and trimmed
  • 1/2 cup all-purpose flour (or rice flour for gluten-free)
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Cold water or sparkling water, about 3/4 cup (enough to make batter)
  • Vegetable oil, for frying (about 2-3 inches deep)

Instructions

  1. Prep the Green Beans: Wash the green beans thoroughly and trim off the ends. Pat them dry completely with a kitchen towel to ensure the batter sticks well and to prevent oil splatters.
  2. Make the Batter: In a mixing bowl, combine the all-purpose flour (or gluten-free flour), cornstarch, baking powder, salt, pepper, and optional garlic powder. Gradually whisk in cold water or sparkling water until you get a smooth, slightly thick batter that clings well to the beans.
  3. Heat the Oil: Pour vegetable oil into a deep frying pan or pot, filling it about 2 to 3 inches deep. Heat the oil to 350°F (175°C), using a thermometer to ensure the ideal frying temperature for crispiness.
  4. Coat the Beans: Dip the green beans into the batter, making sure they are evenly coated. Gently shake off any excess batter for even frying.
  5. Fry the Green Beans: Carefully drop the battered green beans into the hot oil in small batches, avoiding overcrowding. Fry for approximately 2 to 3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
  6. Serve Warm: Serve the fried green beans hot with your favorite dipping sauce for maximum flavor and crunch.

Notes

  • Dry green beans completely before battering to avoid oil splatter and ensure batter adhesion.
  • Maintain oil temperature at 350°F (175°C) for even frying and to prevent greasy beans.
  • Fry in small batches to keep oil temperature consistent and avoid sogginess.
  • Using sparkling water in the batter helps create a lighter, crispier coating due to the bubbles.
  • Drain fried beans well on paper towels to remove excess oil before serving.
