Ingredients

Scale

Chicken and Marinade

  • 1.5 lbs boneless chicken breast or thighs, cut into 1 to 1.5 inch cubes
  • 1 cup plain yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Additional Items

  • Fresh parsley, chopped (optional for garnish)
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before use)

Instructions

  1. Prepare the marinade: In a mixing bowl, whisk together plain yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, dried oregano, salt, and black pepper until smooth and fragrant to create the marinade.
  2. Marinate the chicken: Cut chicken into evenly sized cubes. Submerge the chicken pieces into the marinade, cover the bowl, and refrigerate for at least 2 hours, preferably overnight for maximum tenderness and flavor infusion.
  3. Prepare skewers and grill: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread marinated chicken pieces evenly onto each skewer, leaving space between pieces. Preheat grill to medium-high heat, then cook kabobs for 10 to 15 minutes, turning occasionally until golden brown and fully cooked.
  4. Rest and garnish: Allow the grilled kabobs to rest for a few minutes to retain their juices. Sprinkle with chopped fresh parsley just before serving to add freshness and color.

Notes

  • Marinate longer for more tender and flavorful chicken.
  • Cut chicken into uniform pieces for even cooking and to avoid dryness.
  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C) for safety and juiciness.
  • Do not overcrowd the grill to allow even cooking and proper grill marks.
  • Let kabobs rest after grilling to redistribute juices for maximum flavor.
