Ingredients

Scale

Salad Ingredients

  • 34 medium beets (roasted or boiled)
  • 4 cups fresh arugula, rinsed and dried
  • 1/2 cup goat cheese or feta, crumbled
  • 1/3 cup walnuts or pecans, toasted

Dressing Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare and Cook the Beets: Start by washing the beets thoroughly. Roast whole beets in the oven at 400°F (200°C) for about 45 minutes until tender, or boil them in water until easily pierced with a fork. Once cooked, let them cool, peel the skins easily by rubbing, and slice or cube depending on your preference.
  2. Wash and Prep the Arugula: Rinse fresh arugula leaves thoroughly and pat dry with a kitchen towel or salad spinner to ensure crispness and prevent watering down the dressing later.
  3. Make the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, salt, and pepper until emulsified and smooth. Adjust ingredients to taste, balancing acidity and sweetness to your liking.
  4. Assemble the Salad: Combine the sliced beets, fresh arugula, crumbled goat cheese, and toasted walnuts in a large bowl. Drizzle with dressing and toss gently until all components are evenly coated.
  5. Serve and Enjoy: Transfer the salad to a serving platter or individual plates. For a finishing touch, add a sprinkle of freshly cracked black pepper or a drizzle of extra balsamic glaze if desired.

Notes

  • Roast beets wrapped in foil to lock in moisture and enhance sweetness.
  • Use room temperature dressing to help flavors meld better on the salad.
  • Toast nuts lightly in a dry pan until fragrant for extra flavor and crunch.
  • Taste the dressing before tossing to achieve the perfect sweet-tangy balance.
  • Cook and chill beets up to two days ahead for quick assembly.
