Ingredients

Scale

Base Ingredients

  • 1 cup rolled oats
  • ½ cup nut butter (peanut, almond, or sunflower seed butter for nut-free option)
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract

Add-ins

  • 2 tbsp chia seeds or flaxseeds
  • ¼ cup dark chocolate chips or dried fruit (e.g., chopped apricots, cranberries, or raisins)

Optional Add-ins

  • 2 tbsp shredded coconut
  • 1 tbsp cacao nibs or maca powder (superfood boost)
  • 1 scoop protein powder (for protein-packed variation)
  • Pinch of cinnamon, nutmeg, or ginger (for spiced variation)

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix rolled oats, chia seeds or flaxseeds, and any add-ins like dark chocolate chips, dried fruit, shredded coconut, cacao nibs, maca powder, protein powder, or spices. This ensures even distribution before adding the wet ingredients.
  2. Add Wet Ingredients: Stir in nut butter, honey or maple syrup, and vanilla extract. Use a sturdy spoon or your hands to blend everything until the mixture becomes sticky and holds together well.
  3. Chill the Mixture: Cover the bowl and refrigerate for 20 to 30 minutes. This step firms up the mixture, making it much easier to shape into balls.
  4. Shape the Energy Bites: Using your hands or a small cookie scoop, form the mixture into bite-sized balls about 1 inch in diameter. This size helps with portion control and snack convenience.
  5. Store and Enjoy: Place the Energy Bites on a lined tray or airtight container. Refrigerate for up to a week or freeze for up to three months. Enjoy chilled or at room temperature whenever you need a quick, nutritious snack.

Notes

  • Adjust Consistency: If the mixture is too dry, add a bit more nut butter or honey; if too wet, add extra oats.
  • Use Fresh Ingredients: Fresh nut butters and natural sweeteners provide the best flavor and texture.
  • Don’t Skip Chilling: Refrigeration makes rolling easier and helps the bites keep their shape longer.
  • Experiment with Sizes: Mini bites are perfect for portion control; larger bites work as a more filling snack.
  • Mix by Hand: Combining ingredients by hand ensures thorough mixing and a good feel for the texture.
  • Vegan Option: Use maple syrup or agave instead of honey and ensure add-ins are dairy-free.
  • Gluten-Free: Use certified gluten-free oats to keep the bites gluten-free.
