Egg Base
- 6 large eggs
- 1/2 cup cottage cheese or cream cheese
- 1/2 cup shredded cheese (cheddar or Monterey Jack)
Fresh Vegetables
- 1/4 cup chopped spinach
- 1/4 cup diced bell peppers
- 1/4 cup chopped tomatoes
Meats
- 1/4 cup cooked bacon or cooked sausage, chopped
Seasonings
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon fresh or dried herbs (parsley, chives, or basil)
Cooking Liquid
- 1 cup water or broth (for Instant Pot)
- Prepare your egg mixture: Crack the eggs into a mixing bowl. Add cottage cheese or cream cheese, shredded cheese, salt, pepper, garlic powder, and herbs. Use a blender or whisk to blend until the mixture is smooth and creamy for perfect texture.
- Add your mix-ins: Gently fold in your choice of chopped veggies like spinach, bell peppers, tomatoes, and cooked meats such as bacon or sausage, ensuring even distribution for full flavor in every bite.
- Pour into silicone molds: Use silicone molds or silicone-lined ramekins to portion out the mixture evenly, filling each mold about three-quarters full to leave room for expansion during cooking.
- Set up the Instant Pot: Pour 1 cup of water or broth into the Instant Pot. Place the trivet inside and carefully set the filled molds on the trivet. Close the lid and make sure the valve is sealed.
- Pressure cook and release: Set the Instant Pot to manual pressure cook on high for 8 minutes. Once finished, perform a quick pressure release and carefully remove the molds.
- Cool and serve: Let the egg bites cool for a couple of minutes before gently popping them out of the molds. Serve warm or store for later.
Notes
- Blend the egg mixture for a silky, creamy texture that’s hard to beat.
- Do not overfill molds to avoid uneven cooking or spills.
- Use silicone molds for easy removal without sticking.
- Customize your egg bites by experimenting with different cheeses, vegetables, and herbs.
- Allow egg bites to cool completely to set their shape before handling or storing.
