Instructions

  1. Prepare the Yeast Mixture: Combine 1 cup warm water with 1 teaspoon sugar and 1 teaspoon active dry yeast in a bowl. Let it sit for 5-10 minutes until foamy to activate the yeast.
  2. Mix the Dough: In a large mixing bowl, stir together 2 ½ cups all-purpose flour and 1 teaspoon salt. Slowly pour in the yeast mixture along with 3 tablespoons extra virgin olive oil, mixing until a sticky dough forms. Fold in the minced garlic and finely chopped fresh rosemary towards the end.
  3. Knead and Let Rise: Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 1 hour or until doubled in size.
  4. Shape Into Muffins: Punch down the risen dough and divide it into equal portions. Place each portion into a greased muffin tin cup, pressing down slightly to flatten and shape. Drizzle olive oil over each muffin and sprinkle a few rosemary leaves and sea salt flakes on top.
  5. Final Rise and Bake: Allow the shaped muffins to rise again for 20-30 minutes. Preheat oven to 375°F (190°C) and bake the muffins for 20-25 minutes until golden brown and cooked through. Let cool slightly before removing from the tin.
