Sauce

  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 shallots, finely chopped
  • ¾ cup Marsala wine
  • 1 cup chicken broth
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry and pound them to an even thickness to ensure uniform cooking. Season with salt and pepper, then lightly coat each piece with flour, shaking off any excess.
  2. Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the floured chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Remove chicken and set aside; it will finish cooking in the sauce.
  3. Sauté the Aromatics and Mushrooms: In the same skillet, add more butter if needed. Sauté minced garlic and shallots until fragrant and translucent. Add sliced mushrooms and cook until tender and lightly browned, about 5 minutes.
  4. Deglaze with Marsala and Broth: Pour in the Marsala wine and use a wooden spoon to scrape any browned bits from the bottom of the pan. Allow the wine to reduce by half to concentrate its flavor. Add chicken broth and bring to a simmer, letting the sauce thicken slightly.
  5. Finish Cooking the Chicken: Return the chicken breasts to the skillet and spoon sauce over them. Simmer together for 5-7 minutes until the chicken is fully cooked and sauce is glossy. Adjust seasoning with salt and pepper as needed.
  6. Garnish and Serve: Sprinkle freshly chopped parsley over the dish for color and freshness. Serve immediately with your preferred sides.
