Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, sliced into thin strips

Noodles

  • 8 oz lo mein noodles

Vegetables

  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup snap peas
  • 2 green onions, chopped (for garnish)

Sauce & Aromatics

  • 3 tbsp soy sauce (or low-sodium soy sauce)
  • 2 tbsp oyster sauce (or hoisin sauce/mushroom sauce as substitute)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tsp sesame oil

Oil

  • 2 tbsp vegetable or canola oil (for stir-frying)

Instructions

  1. Prep the Ingredients: Slice chicken into thin strips and chop all vegetables into bite-sized pieces to ensure quick and even cooking.
  2. Cook the Noodles: Boil the lo mein noodles according to package instructions until tender but still chewy. Drain and toss with a little oil to prevent sticking.
  3. Stir-Fry Chicken: Heat vegetable or canola oil in a wok or large skillet over medium-high heat. Add chicken strips and cook for 5-7 minutes until golden brown and cooked through. Remove from pan and set aside.
  4. Sauté Vegetables and Aromatics: In the same pan, add more oil if needed. Add minced garlic and ginger, stir-frying briefly until aromatic. Add sliced vegetables and stir-fry until just tender but still crisp, about 3-4 minutes.
  5. Combine and Add Sauce: Return chicken to the pan with vegetables. Add drained noodles, then pour in soy sauce, oyster sauce, and sesame oil. Toss everything together over heat until well combined and heated through.
  6. Garnish and Serve: Remove from heat and garnish with chopped green onions or toasted sesame seeds. Serve immediately for the freshest flavor.

Notes

  • Prep all ingredients before cooking to ensure smooth, quick stir-frying.
  • Do not overcrowd the pan; cook chicken and veggies in batches if needed to properly sear.
  • Use high heat for stir-frying to keep vegetables crisp and chicken juicy.
  • Toss noodles with oil after draining to prevent clumping.
  • Adjust seasoning gradually, tasting as you go to balance flavors.
  • Frozen vegetables can be used but should be thawed and drained well to avoid sogginess.
  • Substitute oyster sauce with hoisin, mushroom sauce, or a soy sauce with sugar mix if unavailable.
  • For gluten-free, use tamari soy sauce and gluten-free noodles like rice noodles.
  • Reheat leftovers in a skillet with a splash of water or broth to maintain texture.
