Easy Bruschetta

Easy Bruschetta

Easy Bruschetta is a quick, fresh, and flavorful Italian appetizer featuring ripe tomatoes, aromatic basil, garlic, and crusty bread, all combined for a vibrant, healthy, and delicious bite perfect for any occasion.

Ingredients

Scale

Tomato Topping

  • 2 cups fresh, ripe tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste

Bread

  • 1 fresh baguette, sliced into 1/2-inch rounds
  • 1 tablespoon extra virgin olive oil (for brushing bread)

Optional Garnishes

  • Balsamic glaze, for drizzling
  • Fresh basil leaves
  • Grated Parmesan cheese

Instructions

  1. Prepare the Tomato Topping: Dice fresh, ripe tomatoes into small pieces. In a bowl, combine the tomatoes with chopped fresh basil, minced garlic, a drizzle of extra virgin olive oil, and season with salt and pepper. Let the mixture sit for 10 minutes to meld the flavors.
  2. Toast the Bread: Slice a fresh baguette into 1/2-inch thick rounds. Brush each slice lightly with olive oil and toast them in a hot oven or skillet until golden and crisp on the edges while remaining tender inside. This creates the perfect crunchy base for the toppings.
  3. Assemble: Spoon generous amounts of the tomato mixture onto each toasted bread slice. Optionally, drizzle with balsamic glaze for a sweet and tangy finish. Serve immediately to enjoy the contrast between fresh and crunchy textures.

Notes

  • Use ripe tomatoes for the best flavor.
  • Toast bread well to prevent sogginess.
  • Adjust salt and pepper to taste but do not overpower the topping.
  • Add basil last to maintain vibrant color and aroma.
  • Serve immediately after assembling for optimal texture and freshness.
