Dirty Chai Bars are a quick and energizing snack that combines the warm, bold spices of chai with the rich kick of espresso. These chewy, flavorful bars blend rolled oats, chai spices, espresso powder, natural sweeteners, and optional mix-ins for a versatile treat perfect for breakfast, on-the-go snacking, or a cozy afternoon boost.

Dry Ingredients

  • 1 1/2 cups rolled oats
  • 1 1/2 teaspoons chai spice mix (cinnamon, cardamom, ginger, cloves)
  • 1 tablespoon instant espresso powder
  • 1/2 cup chopped nuts or seeds (optional)
  • 1/4 cup dark chocolate chips (optional)

Wet Ingredients

  • 1/3 cup coconut oil
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare Your Dry Ingredients: In a large mixing bowl, combine the rolled oats, chai spice mix, instant espresso powder, and any chopped nuts or seeds you’re using. Stir everything together until evenly blended to create a flavorful, aromatic base.
  2. Mix Wet Ingredients: In a small saucepan over low heat, gently melt the coconut oil. Then add honey or maple syrup and vanilla extract. Stir until well combined and warm, forming a smooth, sweet mixture to bind the bars.
  3. Combine and Fold: Pour the warm liquid mixture into the dry oat mixture. Using a spoon or spatula, fold everything together thoroughly so all oats are coated and the mixture becomes sticky but manageable.
  4. Press Into Pan: Line a small baking dish or tray with parchment paper. Transfer the bar mixture into the pan and press down firmly and evenly with the back of a spatula or your hands to compact the mixture and help the bars hold together after setting.
  5. Chill and Set: If using chocolate chips, sprinkle them on top before chilling to allow them to soften and stick. Place the pan in the refrigerator for at least 1 hour or until firm enough to cut. Once chilled, lift the parchment and slice into bars of your desired size.
