Ingredients

Scale

Main Ingredients

  • 1 cup red lentils, rinsed thoroughly
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder
  • 1 can (14 oz) diced tomatoes (or 2 medium fresh tomatoes, diced)
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper, to taste

Garnish

  • Fresh cilantro, chopped
  • Optional: lime wedges, yogurt or coconut cream

Instructions

  1. Sauté Aromatics: Heat a tablespoon of oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook for about 5 minutes until softened and fragrant, forming the flavor base of the soup.
  2. Add Spices: Stir in the curry powder and turmeric powder, cooking continuously for about 1 minute to toast the spices and release their essential oils that deepen the soup’s aroma and richness.
  3. Incorporate Lentils and Liquids: Add the rinsed red lentils, diced tomatoes, and vegetable broth to the pot. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook for about 15 minutes until the lentils are tender and beginning to break down.
  4. Stir in Coconut Milk: Pour in the coconut milk and stir well. Continue cooking for another 5 minutes to allow the soup to thicken slightly and for the flavors to meld together beautifully.
  5. Season and Finish: Season the soup with salt and freshly ground pepper to taste. Remove the pot from heat and garnish with chopped fresh cilantro before serving for a fresh and bright finish.

Notes

  • Rinse lentils thoroughly to prevent foam and ensure a cleaner broth.
  • Toast spices well in oil to intensify the flavor.
  • Adjust broth quantity for desired thickness; simmer longer for thicker soup.
  • Use fresh garlic and ginger for optimum brightness and warmth.
  • Allow soup to rest off the heat for a few minutes to blend flavors fully.
