Cucumber Tea Sandwiches

Cucumber Tea Sandwiches

Cucumber Tea Sandwiches are light, refreshing, and elegant finger foods that combine crisp cucumber slices with soft white bread and creamy herb-infused spreads. Perfect for tea parties or simple snacks, they are easy to make, versatile, and a healthy choice suitable for a variety of dietary preferences.

Ingredients

Main Ingredients

  • Fresh Cucumbers – thinly sliced (about 1-2 mm thick)
  • Soft White Bread – crusts removed, slices
  • Cream Cheese – softened
  • Fresh Dill or Chives – finely chopped
  • Lemon Juice – a splash
  • Salt and Pepper – to taste

Optional Variations

  • Herbed Goat Cheese or Labneh – as substitute for cream cheese
  • Gluten-Free Bread – as substitute for soft white bread
  • Avocado – thinly sliced (optional addition)
  • Smoked Salmon – thin slices (optional addition)
  • Plant-Based Spread – for vegan variation

Instructions

  1. Prepare the Cucumbers: Wash the cucumbers thoroughly and peel them if desired for a cleaner look. Using a sharp knife or mandoline, slice them into ultra-thin rounds approximately 1-2 millimeters thick to keep the sandwiches light and elegant.
  2. Make the Spread: In a small bowl, combine softened cream cheese with finely chopped fresh dill or chives, a splash of lemon juice, and a pinch of salt and pepper. Stir thoroughly until smooth and flavorful, adjusting seasoning to taste.
  3. Prepare the Bread: Remove the crusts from slices of soft white bread to create a delicate texture. Spread an even, generous layer of the prepared cream cheese mixture on each slice, ensuring every bite is creamy and delicious.
  4. Assemble the Sandwiches: Layer the thin cucumber slices evenly over the spread on half of the bread slices. Place the remaining slices on top to form sandwiches, pressing gently to secure all layers.
  5. Cut and Serve: Using a sharp serrated bread knife, trim the sandwiches into neat rectangles or triangles sized for two to three bites each. Arrange them attractively on a serving tray lined with parchment paper or doilies to enhance presentation.

Notes

  • Use day-old bread for easier slicing and better sandwich texture.
  • Pat cucumber slices dry with paper towels to prevent soggy sandwiches.
  • Refrigerate assembled sandwiches for at least 30 minutes before serving to allow flavors to meld and bread to firm up.
  • Use a serrated bread knife for clean, neat sandwich edges.
  • Consume sandwiches within a few hours of assembly for best taste and texture.
  • Store leftovers in an airtight container lined with a paper towel in the refrigerator and consume within 24 hours.
  • Do not freeze sandwiches as cucumbers and bread texture degrade.
  • Serve sandwiches cold or at room temperature; reheating is not recommended.
