Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1/3 cup milk or cream
  • Salt, to taste
  • Black pepper, to taste

Main Ingredients

  • 1 cup diced ham
  • 1/2 cup diced bell peppers (any color)
  • 1 cup chopped fresh spinach
  • 3/4 cup shredded cheese (cheddar, mozzarella, or your choice)

Optional Ingredients

  • Fresh parsley or chives, chopped (for garnish)
  • Optional herbs such as parsley or chives

Instructions

  1. Prep Your Ingredients: Preheat your oven to 180°C (350°F). Dice the ham, chop the bell peppers, and roughly chop the spinach. Grate the cheese and set all ingredients aside.
  2. Mix the Egg Base: In a medium bowl, whisk together the eggs, milk or cream, salt, and pepper until smooth and slightly frothy to create the egg custard base.
  3. Combine Ingredients: Gently fold the diced ham, vegetables, and shredded cheese into the egg mixture, ensuring even distribution for consistent flavor in every mini quiche.
  4. Fill the Muffin Tin: Lightly grease a mini muffin tin. Pour the mixture evenly into each cup, filling about three-quarters full to allow room for rising during baking.
  5. Bake Until Set: Place the muffin tin in the preheated oven and bake for 15 to 20 minutes, or until the quiches are puffed, golden on top, and a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Allow the mini quiches to cool slightly before removing them from the tin. Serve warm or at room temperature, optionally garnished with fresh herbs or a dollop of sour cream.

Notes

  • Use fresh eggs for lighter and fluffier quiches.
  • Don’t overfill muffin cups to avoid spillover and ensure even cooking.
  • Sauté watery vegetables like spinach or mushrooms before adding to avoid soggy quiches.
  • Cool quiches before removing from the tin to help them firm up.
  • Customize with cheeses that have strong flavors to add savory depth without extra salt.
