Crockpot Hamburger Potato Casserole

Crockpot Hamburger Potato Casserole

This Crockpot Hamburger Potato Casserole is a comforting and hearty slow cooker meal combining tender ground beef, soft potatoes, and a gooey cheese blend. Perfect for busy weeknights or relaxed family dinners, it requires minimal preparation while delivering maximum flavor with classic, family-friendly ingredients.

Ingredients

Scale

Protein

  • 1 lb ground beef (lean or regular)

Vegetables

  • 4 cups russet or Yukon Gold potatoes, peeled and diced
  • 1 medium onion, finely chopped

Dairy & Cheese

  • 2 cups cheese blend (cheddar and Monterey Jack), shredded, divided
  • 1/2 cup milk or broth

Condiments & Canned Goods

  • 1 can (10.5 oz) condensed cream soup (cream of mushroom or cream of celery)

Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika (smoked paprika optional)

Instructions

  1. Brown the Ground Beef: Heat a skillet over medium heat and cook the ground beef, breaking it apart with a spoon until no pink remains. Drain excess fat to prevent greasiness in the casserole.
  2. Prepare the Potatoes and Onion: While the beef cooks, peel and dice the potatoes into bite-sized pieces. Finely chop the onion to ensure it cooks evenly within the casserole.
  3. Layer the Ingredients in the Crockpot: Spread half the potatoes evenly on the bottom of the crockpot. Add the cooked ground beef on top, followed by the chopped onions and half of the shredded cheese. Repeat the layering with the remaining potatoes and cheese.
  4. Mix the Sauce: In a separate bowl, whisk together the condensed cream soup, milk (or broth), salt, pepper, garlic powder, and paprika until smooth. Pour this sauce mixture evenly over the layered ingredients in the crockpot.
  5. Cook Low and Slow: Cover the crockpot and cook on low for 6 to 8 hours, or until the potatoes are tender and the casserole is bubbling. In the last 30 minutes of cooking, sprinkle the remaining cheese on top to melt into a gooey finish.

Notes

  • Chop potatoes into uniform pieces for even cooking.
  • Drain ground beef fat well to avoid oily casserole.
  • Do not rush cooking time; slow cooking melds flavors and softens potatoes perfectly.
  • Use a crockpot liner for easy cleanup.
  • Check potato doneness with a fork around 6 hours if desired.
