  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 bell pepper, chopped (optional)

Instructions

  1. Prep the Ingredients: Season the chicken breasts generously on all sides with Cajun seasoning. Chop the onion, garlic, and optional bell peppers while heating the crock pot.
  2. Layer the Crock Pot: Place the seasoned chicken at the bottom. Add onions, garlic, diced tomatoes with green chilies, and bell peppers on top. Pour in chicken broth. Do not add cream or pasta yet.
  3. Cook Low and Slow: Cover and cook on low for 5-6 hours until chicken is tender and infused with Cajun flavors.
  4. Add Pasta and Cream: About 30 minutes before serving, shred or dice the cooked chicken in the crock pot. Stir in the penne pasta and heavy cream. Switch to high heat and cook until pasta is tender and sauce thickens.
  5. Finish with Cheese: Stir in shredded cheese until melted and smooth. Taste and adjust seasoning with salt or extra Cajun spice as needed.
