Instructions

  1. Prepare the Salmon: Cut fresh salmon into even bite-sized cubes and pat dry with paper towels to remove excess moisture, helping the batter stick better.

  3. Coat the Salmon: Dredge each salmon cube in the flour, shaking off excess, dip into beaten eggs letting excess drip off, then press firmly into panko breadcrumbs until fully coated.
  4. Fry or Bake: Heat oil in a skillet over medium-high heat and fry coated salmon cubes for 2–3 minutes per side until golden and crispy. Alternatively, bake on a greased baking sheet at 425°F (220°C) for 15 minutes, flipping halfway through, for a lighter preparation.
  5. Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lemon juice until smooth. Adjust spice level according to preference.
  6. Toss and Serve: Place cooked salmon bites in a bowl, drizzle with the bang bang sauce, and gently toss to coat evenly. Serve immediately while crispy with optional garnishes.
