Ingredients

Pastry and Cheese

  • Puff pastry sheets (enough for 12-16 tarts, about 1 sheet)
  • Brie cheese (about 8 oz, creamy and ripe)

Fillings

  • Bacon strips (6-8 slices, cooked crispy)
  • Red onion (1 large, thinly sliced)
  • Cranberry sauce (1/2 cup, tart and vibrant)

Optional Herbs and Seasonings

  • Fresh thyme or rosemary (1-2 teaspoons, finely chopped)
  • Salt and pepper (to taste)

Instructions

  1. Prepare the Bacon and Onions: Cook the bacon strips in a skillet over medium heat until crispy. Remove bacon and drain on paper towels. In the same pan, add the thinly sliced red onions and cook on low heat for about 15 minutes until caramelized and golden brown.
  2. Cut and Prep the Puff Pastry: Roll out puff pastry sheets on a lightly floured surface. Cut into evenly sized squares or circles about 3 inches across to form the tart bases.
  3. Assemble the Tarts: Place the pastry pieces on a parchment-lined baking sheet. Add a small slice or cube of Brie on each piece, followed by a spoonful of caramelized onions. Crumble crispy bacon over the top and add a dollop of cranberry sauce. Sprinkle fresh herbs if using, and season with a little salt and pepper.
  4. Bake Until Golden: Preheat the oven to 375°F (190°C). Bake the assembled tarts for 15-18 minutes or until the pastry is puffed and golden, and the Brie is melting. Watch closely to prevent overbrowning.
  5. Serve Warm and Enjoy: Remove from the oven and allow to cool slightly. Serve warm to experience the gooey Brie and balanced flavors at their best.

Notes

  • Use chilled puff pastry to keep the dough flaky and prevent sogginess.
  • Don’t overstuff the tarts to avoid soggy pastry or uneven baking.
  • Caramelize onions slowly over low heat to bring out sweetness without burning.
  • Drain cooked bacon well to keep the tarts crisp and less greasy.
  • Prepare fillings ahead of time and assemble just before baking for freshness.
