Instructions

  1. Prepare Your Puff Pastry: Thaw puff pastry sheets according to package instructions (about 30–40 minutes at room temperature) until pliable but not too soft. Lightly flour your workspace and roll out the dough slightly to an even thickness.
  2. Cut Into Squares: Using a sharp knife or pizza cutter, slice the rolled-out puff pastry into approximately 2-inch squares to form the base cups for filling.
  3. Add Brie and Cranberry: Place a small piece of brie (about one teaspoon) in the center of each pastry square. Top it with a spoonful of cranberry sauce, taking care not to add too much to avoid sogginess.
  4. Fold or Shape the Bites: Fold the corners of each pastry square up toward the center and gently press to seal, leaving some filling visible for a rustic appearance. Alternatively, leave open-faced for a tart-style bite.
  5. Brush With Egg Wash and Add Rosemary: Lightly brush the tops with beaten egg wash to achieve a golden, shiny finish. Sprinkle fresh rosemary leaves on top for aroma and decoration.
  6. Bake to Perfection: Arrange the bites on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 15–18 minutes or until the pastry is puffed and golden and the brie is melted.
