Ingredients

Scale

Dry Ingredients

  • 2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt

Butter and Cheese

  • 1/2 cup (1 stick) Cold Unsalted Butter, cut into small pieces
  • 1 cup Sharp Cheddar Cheese, shredded

Wet Ingredients

  • 3/4 cup Cold Buttermilk

Crab Filling

  • 1 cup Fresh or Canned Crab Meat (drained)
  • 2 Green Onions or 2 tablespoons Chives, chopped
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Old Bay Seasoning
  • 2 tablespoons Mayonnaise or Cream Cheese (for binding)

Instructions

  1. Prepare the Crab Filling: Gently combine the crab meat with chopped green onions or chives, Worcestershire sauce, Old Bay seasoning, and mayonnaise or cream cheese in a bowl. Mix just until combined and set aside to allow the flavors to meld.
  2. Make the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Using a pastry cutter or your fingers, cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the shredded sharp cheddar cheese evenly.
  3. Add Buttermilk and Form Dough: Gradually pour in the cold buttermilk, stirring gently and just until the dough comes together. Avoid over-mixing to keep the biscuits tender and flaky.
  4. Assemble the Biscuits: Turn the dough onto a lightly floured surface. Gently flatten it and use a biscuit cutter to cut into rounds. Place a spoonful of the crab filling onto half of the rounds. Top each with the remaining rounds and pinch or press the edges firmly to seal the filling inside.
  5. Bake Until Golden: Arrange the stuffed biscuits on a baking sheet. Brush the tops with melted butter or egg wash for a golden finish. Bake in a preheated oven at 425°F (220°C) for 12 to 15 minutes, or until the biscuits are golden brown and cooked through.

Notes

  • Use cold butter and cold buttermilk to ensure flaky biscuits.
  • Handle the dough gently and mix minimally to avoid tough biscuits.
  • Seal biscuit edges tightly to prevent crab filling leakage during baking.
  • Fresh lump crab meat is preferred for best flavor, but quality canned crab is a good substitute.
  • Watch baking time carefully to avoid over-browning.
