Ingredients

Scale

Seafood

  • 4 thick, skinless salmon fillets (about 6 oz each)
  • 1/2 cup lump crab meat
  • 1/2 cup peeled and deveined shrimp, chopped

Stuffing Base

  • 1/3 cup softened cream cheese
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 1/4 cup fresh dill, parsley, and chives, finely chopped
  • 1/4 cup breadcrumbs (use gluten-free if desired)
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice

Seasonings and Extras

  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp paprika or cayenne pepper (optional)
  • 2 tbsp melted butter

Instructions

  1. Prepare the Seafood Stuffing: In a mixing bowl, combine the lump crab meat, chopped shrimp, softened cream cheese, minced garlic, finely chopped shallots, fresh herbs, breadcrumbs, lemon zest, salt, and pepper. Mix gently until the ingredients are well blended but retain some chunkiness to maintain texture.
  2. Prepare the Salmon: Rinse the salmon fillets and pat them dry with paper towels. Using a sharp knife, carefully slice horizontally through the thickest part of each fillet to create a pocket, ensuring not to cut all the way through or tear the flesh.
  3. Stuff the Salmon: Spoon the prepared crab and shrimp mixture generously into each salmon pocket. Press gently to secure the stuffing and prevent spilling during cooking.
  4. Bake to Perfection: Place the stuffed salmon fillets on a greased baking dish or one lined with parchment paper. Drizzle melted butter over the top of each fillet, then squeeze fresh lemon juice evenly over them. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the salmon is cooked through and the stuffing is golden on top.
  5. Final Touches: Remove the salmon from the oven and let it rest for a few minutes to allow flavors to meld. Garnish with extra fresh herbs and a light sprinkle of paprika if desired before serving.

Notes

  • Choose fresh or properly thawed crab and shrimp for best flavor and texture.
  • Do not overstuff the salmon to avoid breaking or spilling during baking.
  • Line the baking dish with parchment paper to prevent sticking and make cleanup easier.
  • Check doneness by gently flaking the salmon with a fork; it should be moist and opaque.
  • Allow the dish to rest briefly after baking to redistribute juices for maximum flavor.
