Instructions

  1. Prepare the Ground Beef: Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned and no longer pink, breaking it up with a spoon as it cooks. Drain any excess fat for a leaner soup base.
  2. Sauté the Aromatics: In the same pot, add diced onions, minced garlic, and bell peppers. Cook until softened and fragrant, about 5 minutes, stirring occasionally to prevent sticking.
  3. Add Spices and Tomatoes: Sprinkle in chili powder, cumin, salt, and pepper. Stir well to coat all ingredients evenly. Pour in the diced tomatoes with their juice and let simmer for a few minutes to meld the flavors.
  4. Incorporate Beans, Corn, and Broth: Drain and rinse the beans then add them along with the corn kernels to the pot. Pour in the beef broth, stir to combine, and bring the soup to a gentle boil.
  5. Simmer and Serve: Reduce heat to low and simmer uncovered for at least 25 minutes to allow flavors to develop fully. Taste and adjust seasoning as needed before serving.
