Ingredients

Main Ingredients

  • Fresh or Frozen Corn – 4 cups (kernels)
  • Onions – 1 medium, finely chopped
  • Garlic – 2 cloves, minced
  • Potatoes – 3 medium, peeled and diced
  • Vegetable or Chicken Broth – 4 cups
  • Heavy Cream or Milk – 1 cup
  • Bacon (optional) – 4 slices, chopped
  • Smoked Paprika (optional) – 1 teaspoon
  • Fresh Herbs (parsley or thyme) – 2 tablespoons, chopped
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Prepare Your Vegetables: Finely chop onions and garlic. Peel and dice potatoes into bite-sized cubes. Cut kernels off the cob if using fresh corn.
  2. Sauté Aromatics and Bacon: In a large pot, cook bacon pieces until crispy. Remove bacon, then sauté onions and garlic in the rendered fat until softened and fragrant.
  3. Cook Potatoes and Corn: Add diced potatoes and corn kernels to the pot. Pour in broth and bring to a gentle boil. Simmer until potatoes are tender, about 15 minutes.
  4. Blend for Creaminess (Optional): Transfer a portion of soup to a blender and pulse until smooth. Stir it back into the pot to achieve a velvety texture.
  5. Add Cream and Season: Stir in heavy cream or milk slowly, warming through. Season with salt, pepper, and fresh herbs. Top with crispy bacon bits if desired.

Notes

  • Use fresh corn when possible for best natural sweetness; frozen corn is a convenient alternative.
  • Avoid overcooking potatoes to prevent the chowder from becoming too watery.
  • For extra thickness, mash a few cooked potatoes against the pot sides before adding cream.
  • Simmer gently on low heat to develop flavors without breaking down ingredients too much.
  • Adjust cream or milk amount to control creaminess and dietary preferences.
