Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour (can substitute gluten-free blend)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 1/2 cup unsalted butter, softened (or coconut oil for vegan/dairy-free)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg (or flax egg for vegan)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or yogurt (or plant-based alternative)

Optional Add-ins and Toppings

  • 1/2 cup chopped pecans or walnuts
  • 1/2 cup blueberries or diced apples
  • Streusel topping: mix of brown sugar, cinnamon, and cold butter

Instructions

  1. Prepare the Dough: Cream together softened unsalted butter with granulated and brown sugars until the mixture is light and fluffy. Beat in the egg and vanilla extract thoroughly. Mix in the sour cream or yogurt to add moisture. In a separate bowl, whisk all-purpose flour, baking powder, and cinnamon. Gradually combine the dry ingredients into the wet mixture, stirring gently just until everything is incorporated. Avoid overmixing to maintain a tender cookie texture.
  2. Shape the Cookies: Use a cookie scoop or spoon to portion the dough into even-sized balls and place them on a parchment-lined baking sheet. Lightly press the tops if desired and sprinkle with optional streusel topping or chopped nuts for extra texture and authentic coffee cake flair.
  3. Bake Until Golden: Preheat your oven to 350°F (175°C). Bake the cookies for 12 to 15 minutes, carefully watching for golden edges and a soft center. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Use room temperature butter and egg for better mixing and texture.
  • Do not overmix the dough to keep cookies soft and fluffy.
  • Use fresh cinnamon powder for more intense warm flavor.
  • Start checking cookies at 12 minutes to avoid overbaking and dryness.
  • If possible, chill the dough for 30 minutes to reduce spreading and enhance flavors.
