Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup milk or buttermilk

Streusel Topping

  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Preheat and Prepare: Start by preheating your oven to 375°F (190°C) and greasing or lining your muffin tin with paper cups.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, salt, granulated sugar, and brown sugar to evenly distribute flavor and leavening agents.
  3. Cream Butter and Eggs: In a separate bowl, beat softened butter with eggs until smooth and creamy, then mix in vanilla extract and milk for added moisture and richness.
  4. Combine Wet and Dry: Pour the wet ingredients into the dry mix and stir gently just until combined, careful not to overmix to keep muffins tender.
  5. Prepare Streusel Topping: Mix together brown sugar, flour, cinnamon, and cold butter cubes by hand or with a pastry cutter until crumbly and evenly coated.
  6. Assemble Muffins: Divide half the batter into the muffin cups, sprinkle a generous amount of streusel topping, then add remaining batter followed by more streusel for a fully indulgent crunch.
  7. Bake: Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean and the topping is golden brown and crisp.
  8. Cool and Enjoy: Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Use softened butter and room-temperature eggs for better batter texture.
  • Stir batter just until combined to avoid dense muffins.
  • Keep butter cold when making streusel to ensure crumbly topping.
  • Use freshly ground cinnamon for strongest flavor.
  • Fill muffin cups about 2/3 full before adding streusel to prevent spillage during baking.
